These marshmallow treats will have you reminiscing about your childhood.
I have a big sweet tooth and I try to stick to healthier desserts when I can (or have the willpower). Marshmallows are said to be a healthier choice. This recipe is a variation of the microwaved marshmallow on a Marie biscuit as a child. It’s still just as sticky and moreish however.
This recipe is my friend Teresa’s, and I ever so slightly modified it.

*Note that the amount of the ingredients depends on how big your ramekins are and to your own taste.
- Tennis biscuits
- Slab of your favourite chocolate
First thing you need to do is cover ramekins in non-stick spray. After this crucial step is done, place tennis biscuits in a ziplock bag. Using the back of metal spoon (I used a metal measuring spoon) crush the biscuits to fine crumbs. In a bowl, heat butter until liquid and add in the crushed biscuits crumbs. Stir to combine. Place the mixture in the base of the ramekins in an even layer and flatten using your fingers. Place in the fridge for 20 – 30 minutes to harden.
Remove ramekins from the fridge and place marshmallows onto the base. Sprinkle with crushed chocolate and microwave for 20 minutes on high. Open the microwave door every 5 to 8 seconds to prevent the marshmallows from making a fine mess.
Serve immediately otherwise it gets hard and is even messier to eat.
That’s all that there is to it, really. I must warn you that it’s messy and sticky to eat. The perfect ode to our childhood.
